STAGE ONE. GROWING BROILERS & MEAT PROCESSING

Our poultry farms run in a closed cycle. They consist of broiler farms, incubators and modern processing facilities. Animal health is an integral part of the production. At every one of MHP’s poultry farms, experienced veterinary and livestock specialists work to provide a balanced diet with clean fresh water and no steroids for the animals.

The meat-processing plant exclusively uses raw materials of our broiler farms within the MHP holding. The major part of production (up to 90%) consists of chicken meat. All raw materials have to pass mandatory organoleptic, physiochemical and microbiological controls. Each batch of raw materials is assigned a bar code, which enables traceability system.

Plant "Lehko" has implemented a Hazard Analysis and Critical Control Points system, or HACCP, with the first Control Point being the storage of raw materials. Strict temperature monitoring takes place every 15 seconds and in case of deviations, HACCP prescribes an algorithm of actions for efficient resolution of the problem. The storage conditions of spices and bread mixes are also strictly monitored. MHP uses proven supplements brands and suppliers, such as Griffith, Newlly Weds Foods and Kerry.

All raw materials are testing with metal detectors in order to minimize the risk of metals getting into the finished product. Raw materials are grounding with the required lattice diameter and transferred into the mixer, where required ingredients are added. Prepared raw materials are sent to the storage chamber – the second Critical Control Point. Modern freezing technologies allow Plant "Lehko" to avoid using preservatives while maintaining product’s exceptional taste throughout the shelf-life.

Plant "Lehko" is equipped with three production lines for the frozen ready-to-eat meat products. Product forming and portioning equipment is provided by CFS and marell equipment. Steam-cooking takes place in a bi-zonal spiral oven Cookstar, which ensures preservation of products' juiciness. MultiDrum equipment enables to make KFC-type breaded products baked in marinades. Finished products are transferring to a spiral freezer TempoFROST, for shock freezing at minus 30 degrees.

While packaging — at the fourth Control point — the core temperature of products should not exceed minus 18 degrees. Here the products are packing in trays on the horizontal PowerPack equipment, in packets on the vertical SmartPacker equipment, or weight-packaged. The weight is controlling with Checkweighter equipment. All products pass mandatory checks on the metal detector. Three warehouses are the fifth Control point, where the temperature also should not exceed minus 18 degrees.

11 distribution centers and MHP’s own fleet of trucks ensure prompt delivery in auto-refrigerators under special temperature conditions and with strict vehicle sanitary control, allowing the consumer to receive fresh products of the highest quality in the shortest possible time.
